Best chickpea salad recipe; Greek-style!

When it comes to living a Skinny Healthy Lifestyle in addition to exercising and practicing yoga, I am always on the hunt for new flavorful foods.  This recipe happened by accident.  My husband was looking to make a different type of salad with a Greek influence, did a little reseach and came up with the best summer salad ever, Greek-style chick pea!  We love and make it all of the time, even in the colder months.  It’s easy, healthy and the perfect salad to serve at home or to wow your friends at a party.  My mom actually came over one day after I had put this salad together and thought that I bought it from Whole Foods.  She couldn’t believe how delicious it was and how quickly I had whipped it up.

The goal is chop up your ingredients to be all about the same size so that the salad has a consistent look and is easier to eat.

Ingredients:

2 cans of your favorite chickpeas (Goya is a favorite of mine) drained & rinsed

3/4 cup of fresh feta cheese (getting the kind in the water & crumbling yourself is best)

1 cucumber chopped up small (remove most the seeds as it will water the salad down)

1 red pepper chopped into bite sized pieces

1/4 of a red onion sliced VERY thin

1/2 cup of kalamata olives, pitted & sliced into 3-4 pieces each

1/2 cup of grape tomatoes-chop each one into fours (squeeze out seeds)

1/4 cup of balsamic salad dressing-“Marzetti Simply Dressed” is my FAVORITE!

3 tablespoons of fresh chopped parsley or cilantro

Salt & pepper to taste

Optional: Since we make a lot of it in the summer, adding a 1/2 cup of corn off of the cob is a nice touch.

Who doesn’t love a little fresh corn off the the cob mixed into a salad? We always have extra and never let it go to waste.

Simply combine all of these ingredients, top with the salad dressing, mix and serve…it’s that simple.  This truly is the best summer salad recipe ever and you will love it!
