What a title huh? I was trying to come up with the best way to describe this absolutely amazing dish that I have made over and over again. Including vegetables within my daily Skinny Healthy Girl recipes is important to me. I panic when I don’t have at least 3 vegetables to choose from in my frig each day. I don’t know about you, but one of my all time favorites is broccoli and I have recently grown to love cauliflower as well. So I wanted to come up with a flavorful side dish with both vegetables to serve with anything from steaks to fish and here it is….
What you will need: (see the finished product below)
1 head of cauliflower chopped into medium sized pieces
3 medium-large sized broccoli crowns chopped into medium sized pieces
4 cloves of saute’d garlic
Grated parmesan cheese-fresh, not bottled on the shelf
3/4 cup of low fat or very sharp cheddar cheese (grated)
Extra virgin olive oil
Sea salt & Cracked black pepper
Fill a large stockpot with 3/4 water, 1/4 low sodium chicken broth and a teaspoon of sea salt and bring to a boil. Add your chopped cauliflower and cook for 5 minutes. Remove with a ….. and set aside. Add your broccoli to the same water and cook for 3-4 minutes, remove and set aside with the cauliflower.
In a large skillet heat up 2-3 tablespoons of extra virgin olive oil and saute’ your garlic, spoon out and set aside. Add the cauliflower and let brown on one side, flip over and add your broccoli to mix together. Combine the saute’d garlic and pour 1/2 into a medium sized casserole dish, sprinkle with parmesan and sharp cheddar and then add the remainder of the broccoli cauliflower mix and top with the rest of the cheeses. Drizzle a little olive oil over the top, cover with foil and bake for 20 minutes, uncover and broil for 3-5 minutes or until the top is browned and serve immediately….so, so good!
