These mini pita pizzas (above) are so simple and can be whatever you want them to be. Put a couple of your favorite types of pita in the oven to bake (directly on the rack) at 350 for about 10 minutes so they’re crispy and then just top with your favorite fixins. I love to roast some vegetables like eggplant, onions and peppers, spread onto the baked pita with a little cheese (extra sharp & feta) and put back in the oven for another 8-10 minutes or so. Chop up on a cutting board and serve. Delish!
