Living on the east coast, I have access to some of the freshest foods.  Living near a Stew Leonard’s store doesn’t hurt either.  I was able to score a pound of gorgeous asparagus, (make sure there is a little purple at the tips to ensure freshness).

While the fish was in the oven, I  prepared the asparagus to grill.  You can use your outdoor grill, but if you have an indoor grill, it is simply the best way to cook asparagus.  If you don’t have an indoor grill I highly recommend getting one because you can grill any time of the year with fantastic results.  This is the grill pan that I got here.  See it below too.  Just love it!  Use it every week and all winter long.

Start your grill pan on medium to high heat.  To prepare your asparagus, simply wash it, snap off the ends about 3/4 of the way down and then pat dry with a paper towel.  On a plate, place your asparagus down flat and lightly coat with extra virgin olive oil, a sprinkle of salt and pepper and then one of the secrets, a few dashes of red pepper flake.  Even if you don’t like spicy food, the red pepper flake will only add more flavor.

Rub and roll the ingredients onto the asparagus and then carefully place onto the hot grill pan.  You should hear an instant sizzle and then let the asparagus sit to get a nice browning before turning so that you can insure full flavor (browning = flavor).

Once you have turned the asparagus 2 or 3 times, which usually takes about 8-10 minutes, turn down the heat to low, remove from pan and serve immediately.  Best way to cook asparagus is grilled; it’s easy, delicious and so healthy!
