Best Healthy Spinach Artichoke Dip

Who doesn’t like spinach artichoke dip?  It’s delicious!  But most of us don’t like all the fat that comes along with the incredible taste.  Well, I have the recipe for you and it’s perfect for any party, especially Super Bowl Sunday.  Once you try this healthy spinach artichoke dip, you will never want to order it in a restaurant again because nothing compares to the flavor and knowing it’s healthier for you doesn’t hurt.  You’re going to be a STAR when you serve this at your next party!  It’s so simple to make, here’s what you’ll need…

In a large bowl, mix:

1 box frozen chopped spinach defrosted & drained really well, squeeze tightly.

1 cup of low fat mayonnaise

1 8oz package of 1/3 less fat cream cheese (room temperature)

12oz jar of whole artichokes, chop them up

1/2 cup of fresh parmesan cheese + a little more for the topping

3-4 large cloves of garlic-chopped really well or microplaned into the bowl (great way to add flavor especially when there is less fat that we talked about here)

1/2 teaspoon of cracked black pepper

Drizzle of extra virgin olive oil-another way to add healthy flavor.

Mix all the ingredients together, spread into a baking dish, sprinkle top with extra parm cheese and drizzle a little extra virgin olive oil on top of that.

Bake in a 400 degree oven for 40 minutes, then turn oven to broil and brown the top for 5-6 minutes until golden and crispy.
