Supper NYC Inspired Me: Simple White Bean Olive Oil Dip

Usually when you go out to dinner, you get the boring old bread basket, some are better than others when they actually serve them warm, imagine that.  But Supper NYC inspired me with their simple white bean olive oil dip served with warm, crusty breads, so I made my own version.

My husband and I had a late night dinner one night at Supper in NYC and were blown away at just how special this restaurant truly is.  We had heard it was the place to go, but always hard to get into, we took our chances and were seated fairly quickly.  When you walk into Supper you are immediately blown away with the deliciousness floating through the open-air kitchen.  The dining room is cozy romantic and dimly lit with lots of candles, absolutely beautiful.  We were tucked away in a corner table with a deep purple tablecloth and a very simple menu with a choice a truly made to order comfort food.

But what inspired me most is being served a complimentary mini appetizer consisting of white beans in an infused olive oil and crusty bread.  I had never experienced something so special and satifying at the same time while looking over the menu and enjoying a glass of wine.  After the second bite, I told my husband that I loved it so much that I would be making my own version at home.

This very quick and simple appetizer is so easy to throw together for a party or even on a weeknight for the family while dinner is being made.  Here is all you will need….

One 15.5 oz Can of Small White Beans (Goya is my favorite)

Extra Virgin Olive Oil (One of the best ways to add flavor, like we talked about here)

1 Clove of Fresh Garlic (or use roasted garlic, that I showed you here)

Sea Salt & Cracked Black Pepper

2 Tablespoons of Fresh Parmesan Cheese

Red Pepper Flakes (Red pepper add a little heat, if you don’t like it, omit them.)

Fresh Rosemary

Crusty Whole Grain Bread

Put the rinsed can of beans into a bowl, add 3-4 tablespoons of extra virgin olive oil (or to your liking), microplane the clove of garlic, salt and pepper to taste. Remove the fresh rosemary from it’s stem, finely chop and stir into the mixture along with the cheese. Sprinkle some red pepper flakes into bowl and mix well.  Basically, all you really have to do is put all of these ingredients together into a bowl of your choice and serve with a really good crusty whole grain bread on the side.  I am so glad that Supper NYC inspired me with this simple white bean olive oil dip, I know that you will love it.
